There’s a million reasons why I love Cinco De Mayo. For one, it’s the only day where you get to put all the primary colours and still look awesome, but most importantly, the food! Mexican cuisine is full of flavours, spices and punch. Who does NOT like Mexican cuisine? Seriously? One of my favourite things to eat is seafood. So I decided to share a recipe of Shrimp & Avocado Ceviche for Cinco De Mayo.
What I love the most about a Mexican ceviche – other than the shrimp and avocado, is that it is super easy, light and fresh, and I think it’s the perfect summer snack for seafood lovers. You can make it mild or spicy, its all personal taste.
